Did you know that <\/span>peas<\/b> are part of the French culinary heritage? Indeed, these small green and tender grains with a slightly sweet taste have been very popular for centuries in France. Grimod de la Reyni\u00e8re also said at the end of the 18th century in <\/span>Le Gastronome Fran\u00e7ais, or the art of living well<\/span><\/i> that “peas are, without a doubt, the best of all the vegetables eaten in Paris”. The success continues to this day.<\/span><\/p>\n

Did you know that there are three varieties of peas? There are two varieties of spring peas, smooth peas and wrinkled peas, and one winter variety, bush peas.<\/span><\/p>\n

Purchase<\/u><\/h3>\n

Peas are available from April to July, but their season is May and June. If you buy them fresh, the pod should be glossy, swollen and firm, bright in color, without yellow stains, and the grain, crunchy and subtly sweet. If you buy them canned or frozen, be sure to read the expiration date carefully.<\/span><\/p>\n

Preservation<\/u><\/h3>\n

Store your peas in the refrigerator in the vegetable drawer for two to three days and if blanched previously, keep them in the freezer for several months.<\/span><\/p>\n

Always shell your peas first, then cook them however you like. If they are canned, all that remains is to heat them gently.<\/span><\/p>\n

Peas are higher in protein than most other vegetables. They are an excellent source of fiber, essential for the regular functioning of the intestines.
