Indeed, asparagus grows underground so initially it has no contact with light. White asparagus, the most classic and delicate, is covered with soil as it grows (hilling technique) and is harvested as soon as it has pierced. Green asparagus grows in the open to a height of 15-20 cm and its color is the result of photosynthesis. Its taste is sweeter and more pronounced.<\/p>\n<h3>Purchase<\/h3>\n<p>Asparaguses are expensive, but their price is justified by the fact that they are hand picked -one by one. Look for the ones with a compact head and with a tender stem. Take a glance at its tip: is it dry, brown or blackish? To recognize its freshness, just break off a small piece of the stem. The break should be clean and immediately let appear a transparent juice that covers the wound.<\/p>\n<h3>Preserve<\/h3>\n<p>Choose asparagus with straight, smooth stems, unblemished, with tight tip scales and a slightly damp heel. Keep them for a maximum of 48 hours in a damp cloth in the vegetable drawer of the refrigerator. If you wish to freeze them, first blanch, drain and let cool.<\/p>\n<h3>Prepare<\/h3>\n<p>Break off the base of the stem where it becomes hard and fibrous. Asparaguses are fragile, so place them flat on your work surface, then peel them with a thrifty knife starting from the base and going up. Repeat the peeling motion several times on the bottom of the stems, where it\u2019s more fibrous. Do a quick wash underwater, group them on your work surface, tips up, and even the stems with a knife. Tie them in loose bunches. Peeled asparagus wrapped in a damp cloth can be kept for a few hours in the vegetable drawer before being cooked. If your bundles include asparagus of several sizes, group them by size and cook them by boot, adapting the cooking time to each boot so that they are cooked evenly.<\/p>\n<h3>Stay healthy<\/h3>\n<p>Asparagus is 92% water and contains very few calories.
