Rather than &#8220;steak, corn, potato&#8221;, it is made with <strong>eggplant<\/strong>, ground meat (beef or lamb) and b\u00e9chamel.<\/p>\n<p>Did you know that the skin of the eggplant is rich in anthocyanins, the same type of antioxidant pigments found in blueberries? Although, not all eggplant is dark skinned. We find all sorts of varieties, some of which are white and pink.<\/p>\n<h3><u>Purchase<\/u><\/h3>\n<p>Choose heavy and firm eggplant that have smooth and unblemished skin with a bright green stalk. If the skin obeys to a light pressure of the finger, it is a sign of ripeness; if the flesh bounces, the fruit is immature and requires a few more days before consuming. The eggplant\u2019s skin is sweeter and its seeds smaller when the vegetable is younger, smaller and without flaw. Warning! Eggplant is fragile and can bruise at the slightest shock.<\/p>\n<h3><u>Preserve<\/u><\/h3>\n<p>Eggplant will keep for about a week in the vegetable drawer of the refrigerator. Cook it before it browns. To enjoy it all year round, it is possible to preserve it (cook the pieces in lemon water with a little honey, then let macerate in oil for several weeks) or freeze it (cut into half-inch slices, then blanch for a few minutes in lemon water).<\/p>\n<p><u style=\"font-size: 1.618em;\">Prepare<\/u><\/p>\n<p>It is preferable to disgorge the eggplant before cooking: its high water content makes it difficult to fry. This first step also allows the removal of the bitterness in the skin. Do the following: cut the eggplant in half or in slices, salt and let stand for 30 to 60 minutes. Many cooks will say that it\u2019s preferable to wash the eggplant to better remove its excess salt. Often, blotting each slice with a paper towel is enough. Otherwise, wash quickly with cold water and blot normally. The eggplant does not peel.<\/p>\n<h3><u>Stay healthy<\/u><\/h3>\n<p>Eggplant is high in fiber, vitamin B, magnesium, zinc, potassium, antioxidants and manganese.
