Choose firm, hand-heavy bok choy with healthy, bright colored and unblemished leaves.<\/p>\n<h3>Preserve<\/h3>\n<p>If you eat it raw, consume it within five days of purchasing it. If you eat it cooked, you can keep it for two weeks in the refrigerator. To keep it later, blanch it for a few minutes, cut it into thin strips, cool with ice water, put it in a bag, then in the freezer.<\/p>\n<h3>Prepare<\/h3>\n<p>Bok choy is eaten raw, marinated, in vinaigrette, steamed, in broth or in a wok. Avoid cooking for too long in order not to lose its crunchy texture.
