Today in North America and Europe, celeriac is eaten for its bulb (root), but back then it was the leaves that we ate.<\/p>\n<p>Did you know that despite its bumpy and misshapen appearance, celeriac is a great ally of rustic dishes as well as of refined dishes? Its delicate and slightly spicy taste enhances the flavors of the dishes.<\/p>\n<h3>Purchase<\/h3>\n<p>Celeriac is mostly found in winter, October through April. Choose a heavy and firm ball, medium in size, with fair, unblemished and as smooth as possible skin. You will see, an oversized ball sounds hollow and offers spongy, fibrous flesh.<\/p>\n<h3>Preserve<\/h3>\n<p>Celeriac will keep for about three months in the crisper of the refrigerator, but it dries out quickly at room temperature. Cook before freezing, for a storage of several months.<\/p>\n<h3>Preparation<\/h3>\n<p>When peeling a celeriac, it loses one third of its weight. To prevent it from darkening, sprinkle it immediately with grated lemon juice. Celeriac can be cooked in pieces -10 minutes in salted boiling water, 15 minutes in steam or 20 minutes in the oven at 180 degrees Celsius.<\/p>\n<h3>Stay healthy<\/h3>\n<p>Celeriac is a vegetable that contains a lot of water and only 40 calories per 100g serving. It is an excellent source of vitamin K, vitamin B, vitamin C, copper, manganese, phosphorus and fiber to regulate bowel problems. In addition, researchers have shown that celery root extracts contain polyacetylenes, compounds that destroy certain cancer cells in vitro.
