The term originated in the French language in 1600. In Latin, <em>caulo-rapa<\/em> means \u201cturnip cabbage\u201d and <em>gongylodes<\/em> means \u201cknees\u201d by allusion to the kneeling position of the bulbous part of the plant on the ground. Some places call it &#8220;colrave&#8221; or &#8220;cabbage&#8221;. Kohlrabi is not a root per se, but rather a swelling of the stem. In botanical parlance, it is said to be an aerial tuber.<\/p>\n<p>Do you know why kohlrabi is disliked in France and North America? Because it was a subsistence food following the aftermath of World War II, it is today scorned by the French and seen as the poor relation of the large cabbage family among North Americans.<\/p>\n<h3>Purchase<\/h3>\n<p>Choose preferably kohlrabi apples 5 cm to 7 cm in diameter. Larger, they are likely to be fibrous.<\/p>\n<h3>Preserve<\/h3>\n<p>To keep your kohlrabi in the refrigerator, put them two by two in a perforated plastic bag. Freeze them by blanching them first for several months storage. Make a sauerkraut with the lacto-fermentation method. Keep them all winter in the cool of your cellar.<\/p>\n<h3>Preparation<\/h3>\n<p>Peel your kohlrabi first, then eat it raw or cook it however you like until the tip of your knife pierces it with slight resistance.<\/p>\n<h3>Stay healthy<\/h3>\n<p>To enjoy the benefits of kohlrabi, eat it raw. Kohlrabi is particularly interesting from a nutritional point of view because of its low caloric and satiating fiber intake. Its also a significant source of vitamin C which protects the body from winter infections.
