Like other members of the cucurbits family, the pumpkin is rich in pro-vitamin A.<\/p>\n<p>Can you tell the pumpkin from the<em> potiron<\/em> ? Although similar, we can tell them apart by looking at their peduncle. The pumpkin&#8217;s is tough and fibrous, while the<em> potiron\u2019s <\/em>\u00a0is softer and flares out at its base.<\/p>\n<h3>Purchase<\/h3>\n<p>The pumpkin should be firm, heavy in the hand, its rind hard, without spots or cracks.<\/p>\n<h3>Preserve<\/h3>\n<p>Keep your pumpkin in a cool, dry place for a few weeks. Avoid the refrigerator. To dehydrate it, empty and peel it, then cut it into thin slices. Put everything in the oven at low temperature or in the dehydrator. The seeds are preferably stored in the refrigerator so as not to go rancid prematurely.<\/p>\n<h3>Preparation<\/h3>\n<p>Cut the pumpkin and get rid of its seeds. Cut it into cubes and boil them either in a large volume of salted water, or in the basket of the steamer, for a cooking time between 15 and 20 minutes.<\/p>\n<h3>Stay healthy<\/h3>\n<p>For 125 ml (\u00bd cup) cooked:<\/p>\n<ul>\n<li>Energy: 25 kcal, Carbohydrates: 6g, Fiber: 1g<\/li>\n<li>Vitamin A: 60% of AQR (excellent source of vitamin A)<\/li>\n<li>Potassium: 6% of RDA (source of potassium)<\/li>\n<li>Copper: 6% of AQR (source of copper)<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Did you know that the orange color of the pumpkin reveals the presence of beta-carotene?
