The real <strong>French shallot<\/strong> is a bulb, resembling a small onion, which belongs to the <em>liliaceae <\/em>family like garlic, onion and leek.<\/p>\n<p>Did you know that shallots have a milder flavor than onions? They are ideal in preparations with more delicate flavors such as b\u00e9chamels and sauces accompanying seafood.<\/p>\n<h3>Purchase<\/h3>\n<p>Shallots are available year round, but are in season from October to December. Choose firm, sprout-free bulbs.<\/p>\n<h3>Preserve<\/h3>\n<p>Shallots can be stored whole for several months in a cool, dry environment. Once peeled, they can be kept for three days in the refrigerator in a box to preserve their aromas and impose their fragrance on other foods.<\/p>\n<h3>Preparation<\/h3>\n<p>Shallots are prepared like onions, but are less eye stinging as long as you cut them in half lengthwise and avoid the so-called gray variety. Then cut them into thin slices. Keep their green stems, they can be eaten like chives.<\/p>\n<p>Cooking chart:<\/p>\n<ul>\n<li>10 minutes in a wok or pan<\/li>\n<li>45 minutes to 1 hour in the oven<\/li>\n<\/ul>\n<h3>Stay healthy<\/h3>\n<p>Shallot is an excellent source of vitamin B9 which is used for cell renewal, vitamin B6 which plays a role in energy, the nervous system and the formation of red blood cells and fibers, which ensures a proper food transit.
