But as iron of plant origin is less well absorbed by the body than that of animal origin, we recommend adding a source of vitamin C (orange, kiwi, tomato, pepper &#8230;) to improve its absorption!<\/p>\n<p>Did you know that spinach belongs to the same family as quinoa, this pseudo-cereal that can be prepared like rice, barley or couscous?<\/p>\n<h3>Purchase<\/h3>\n<p>Spinach is available year round, but is a little rarer in the summer because it doesn&#8217;t like hot weather. Choose spinach with dark green, shiny, crisp leaves. Avoid faded and stained leaves.<\/p>\n<h3>Preserve<\/h3>\n<p>Store your spinach in the refrigerator in the crisper for up to 3 days after purchase. Blanch them, then put them in the freezer to keep for several months.<\/p>\n<h3>Preparation<\/h3>\n<p>Spinach is eaten raw and cooked: the small leaves are tasty raw, the thicker ones are better suited for cooking. Remove the stem and tail of your spinach, then wash it in cold water until there is no trace of sand or soil. Plan two and a half times the portion of cooked spinach for a portion of raw. Fresh or frozen, they cook in minutes and maintain their vibrant green if immersed immediately after in an ice-water bath.<\/p>\n<h3>Stay healthy<\/h3>\n<p>Spinach is an excellent source of vitamin B9 which is used for cell renewal, vitamin C &#8211; for raw spinach &#8211; which supports a healthy immune system and collagen formation, and vitamin E which protects body tissues. Spinach also contains pro-vitamin A, magnesium, calcium and fiber. Be aware that cooked spinach is more nutritious than raw and contains more antioxidants.<\/p>\n<p>For 125 ml (\u00bd cup) cooked:<\/p>\n<ul>\n<li>Energy: 20 kcal, Carbohydrates: 4g, Fiber: 2g (source of fiber)<\/li>\n<li>Vitamin K: 590% of the AQR (excellent source of vitamin K)<\/li>\n<li>Vitamin A: 100% of AQR (excellent source of vitamin A)<\/li>\n<li>Folate: 60% of the AQR (excellent source of folate)<\/li>\n<li>Iron: 25% of the AQR (excellent source of iron)<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Did you know that spinach is one of the most iron-rich vegetables?
