Robert St-Jacques, son of a market gardener in St-Clotilde, is without question the lettuce specialist on the South-Shore of Montreal. He operates his very ambitious business of 240 acres of land with his two sons, Nicolas and Samuel, who have studied in Beauharnois and who are about to take over the company. Lettuce St-Jacques is based on a part of the paternal land, the very fertile and coveted black land from the ancient Champlain Sea, and part on soil acquired over the years. Robert juggles to perfection with different soils and landscapes allowing for different types of lettuce to grow at different times but always giving an outstanding result in matters of quality and taste.
